Some of our American foods and food customs are similar to those of the French.  This is not surprising as many of our early settlers came from France and brought their food customs with them.
In France, the cooking of the famous chefs is called haute cuisine, while home cooking is cuisine de la famille, and peasant cooking is called cuisine de paysan

Here's a sample recipe:

Onion Soup (Soupe a L'Oignon)

4 Tbs. butter or oleomargarine
4 C. onions, thinly sliced
6 C. beef stock
salt and pepper
6 slices toasted French bread
1/2 cup grated Gruyere or Parmesan cheese

Melt fat in heavy pan.  Add onions and cook gently until golden brown (about 10-15 minutes).  Add beef stock, check the seasonings, and cook for 15 minutes.

To serve, place a slice of toasted bread in soup bowl, add soup and sprinkle bread with cheese.
