Here's a sample recipe:
| Coconut pudding (Haupia) 6 servings 3 TBS cornstarch |
Combine dry ingredients and add 1/2 cup of coconut milk. (Directions are in the book.) Blend to a smooth paste. Heat remaining milk over low heat. Add cornstarch mixture and continue cooking until thick, stirring constantly. Pour into a shallow pan about 2 inches deep. Chill until firm. To serve, cut into 2 inch square. Hawaiians serve it on ti leaves. |
