A great recipe for the summer crop of tomatoes.  This recipe is from our Hawaiian Foods and Traditions cookbook!

Stuffed Tomato Salad
(Insaladang Camatis)

6 medium-sized fresh tomatoes

1/2 teaspoon salt (about)

l cup shredded fresh, or crushed canned pineapple

1/3 cup chopped peanuts

1/3 cup diced celery

1 tablespoon French dressing

Salad greens

1.  Cut a slice from the top of each tomato and remove some of the pulp.

2.  Sprinkle the tomatoes with salt and chill them thoroughly.

3.  Dice tomato pulp and combine with drained pineapple, peanuts, celery and French Dressing.

4.  Fill the tomatoes and chill.

5.  Arrange on salad greens. (6 servings.)
