| Onion Soup (Soupe a L'Oignon) 4 Tbs. butter or oleomargarine
4 C. onions, thinly sliced
6 C. beef stock
salt and pepper
6 slices toasted French bread
1/2 cup grated Gruyere or Parmesan cheese |
Melt fat in heavy pan. Add onions and cook gently until golden brown
(about 10-15 minutes). Add beef stock, check the seasonings, and cook for 15
minutes. To serve, place a slice of toasted bread in soup bowl, add soup and sprinkle
bread with cheese.
